Ingredients
SAUCE
¼ cup (50 mL) creamy peanut butter
3 packets Pure Via sweetener
1- ½ (22 mL) Tablespoons hot water
1 Tablespoon (15 mL) lime juice
1 Tablespoon (15 mL) lite soy sauce
1- ½ teaspoons (7 mL) dark sesame oil
¼ teaspoon (1 mL) red pepper flakes
VEGETABLES
2 Tablespoons (30 mL) canola oil
4 cups (1 L) broccoli florets
½ cup (125 mL) chopped red bell pepper
¼ cup (50 mL) thinly sliced green onions
1 minced clove garlic
Directions
For Sauce, combine all ingredients until well blended; set aside.
For Vegetables, cook and stir vegetables in oil in large skillet on medium-high heat 4 to 5 minutes or until vegetables are tender-crisp. Remove from heat and stir in sauce.
Serve warm or at room temperature.
