A take-off on the traditional creamy version of cole slaw. Chopped apples add crunch and a hint of sweetness that is enhanced by Pure Via sweetener.

Ingredients
DRESSING
½ cup (125 mL) reduced fat mayonnaise with olive oil
¼ cup (50 mL) reduced fat sour cream
4 packets Pure Via sweetener
2 teaspoons (10 mL) Dijon mustard
2 teaspoons (10 mL) lemon juice
1/8 teaspoon (0.5 mL) ground black pepper
SLAW
8 ounces (225 g) packaged shredded cabbage
1 cup (250 mL) unpeeled cored chopped red apple
1 cup (250 mL) shredded carrots
½ cup (125 mL) thinly sliced red or green bell pepper
Directions
For Dressing, combine all ingredients until well blended.
For Slaw, combine all ingredients. Gently toss Dressing with cabbage mixture until blended.
Refrigerate, covered, 2 hours for flavors to blend.
