This easy to make cookie is also easy on your diet. Crunchy peanut butter, oats and raisins provide fiber. Sweetness comes from Pure Via and sugar free syrup. Enjoy them as part of your breakfast or as a dessert or snack.

Ingredients
Cooking spray
2 cups (500 mL) corn flakes
1 cup (250 mL) uncooked quick oats
2/3 cup (150 mL) seedless raisins
1/2 cup (125 mL) egg whites
1/2 cup (125 mL) crunchy peanut butter*
30 packets Pure Via sweetener**
2 tablespoons (30 mL) sugar free syrup
2 teaspoons (10 mL) vanilla
1 teaspoon (5 mL) ground cinnamon
*The same amount of crunchy almond butter may be substituted for the crunchy peanut butter. Stir 4 teaspoons all-purpose flour into the combined cereal and peanut butter mixture before letting it stand. Proceed as recipe directions.
** Substitute 1-1/4 cups (300 mL) Pure Via Granulated for packets product.
Directions
Preheat oven to 350°F (180°C). Spray baking sheet with cooking spray; set aside.
Combine corn flakes, oats and raisins in a large mixing bowl.
Combine egg whites and peanut butter in another mixing bowl. Stir in Pure Via, syrup, vanilla and cinnamon until blended. Pour peanut butter mixture over cereal mixture. Mix gently until well combined. Let stand 5 minutes.
Shape mixture into 1-inch balls. Place on prepared cookie sheet. Bake 8 to 10 minutes. Remove from cookie sheet and cool completely on wire rack. Store in covered container at room temperature.
