Ingredients
Cooking spray
7 tablespoons (105 mL) unsalted butter, softened
30 packets Pure Via sweetener
2 large egg whites
2 tablespoons (30 mL) lemon juice
2 tablespoons (30 mL) sugar-free syrup
1 tablespoon (15 mL) coconut extract
1 teaspoon (5 mL) vanilla extract
1 1/4 cups (300 mL) uncooked oats
1 cup (250 mL) all-purpose flour
3/4 teaspoon (3 mL) ground cinnamon
1/2 teaspoon (2 mL) baking soda
1/2 teaspoon (2 mL) salt
1/3 cup (75 mL) raisins
Directions
Preheat oven to 350°F (180°C). Spray cookie sheets with cooking spray; set aside.
Beat butter and Pure Via until blended. Mix in egg whites, lemon juice, sugar-free syrup and extracts. Blend in remaining ingredients, except raisins, until combined. Stir in raisins.
Drop dough by teaspoonfuls onto prepared cookie sheets. Bake 9 to 10 minutes. Let cookies stand on cookie sheets 2 minutes. Remove carefully and cool completely on wire racks.
