These cookies are quick and easy to make, which is good, because they will disappear quickly!

Makes 2 dozen cookies
Ingredients
1/3 cup (75 mL) butter, softened
1 egg
1 teaspoon (5 mL) vanilla extract
12 packets Pure Via sweetener
¼ cup (50 mL) firmly packed dark brown sugar
¾ cup (175 mL) all-purpose flour
½ teaspoon (2 mL) baking soda
¼ teaspoon (1 mL) salt
½ (125 mL) cup mini chocolate chips
Directions
Preheat oven to 350°F.
Beat butter, egg and vanilla until well combined. Mix in Pure Via sweetener and brown sugar until blended. Mix in combined flour, baking soda and salt until well blended. Stir in chocolate chips.
Drop dough by rounded teaspoons onto ungreased baking sheet. Bake 8 to 10 minutes or until light golden color. Remove from baking sheet and cool completely on wire rack. Store in airtight container at room temperature.
