Hot Beverages

 

A rich coffee flavored with orange and lemon peel and cinnamon. It’s served topped with an orange flavored whipped topping. It’s a dessert in a glass!

Makes 2 servings

Ingredients
TOPPING
1/4 cup (50 mL) frozen lite whipped topping, thawed
1/8 teaspoon (0.5 mL) orange extract

COFFEE
8 strips (each 2 inches [5cm] long) lemon peel
8 strips (each 2 inches [5cm] long) orange peel
2 sticks cinnamon
2 to 4 whole cloves, optional
3 cups (750 mL) strong brewed dark roast coffee (such as Vienna OR Italian)
1/4 teaspoon (1 mL) orange extract
4 packets Pure Via sweetener
Additional orange peel, optional

Directions
    For Topping, gently stir extract into prepared whipped topping. Refrigerate until ready to use.

    For Coffee, combine citrus peels, cinnamon stick, cloves and coffee in a saucepan. Heat to boiling on medium heat. Reduce heat to medium-low and simmer 3 minutes. Remove saucepan from heat and let stand 15 minutes.

    Strain coffee. Discard peel, cinnamon sticks and cloves. Divide coffee between 2 mugs. Stir
    1/8 teaspoon (0.5 mL) extract and 2 packets Pure Via into each mug. Divide whipped topping mixture evenly between mugs. Serve each garnished with a piece of orange peel, if desired.

    VARIATION: Substitute 1 tablespoon (15 mL) orange liqueur for the extract in the topping, and 2 tablespoons (30 mL) orange liqueur for the extract in the coffee mixture.
