Savory Sensations

 

A salad with multiple textures tossed with a tangy apple vinaigrette dressing sweetened with Pure Via Turbinado Raw Cane sugar and stevia blend sweetener.

Makes 4 servings

Ingredients
6 Tablespoons (90 mL) frozen apple juice concentrate, thawed
4 teaspoons (20 mL) cider vinegar
1 packet Pure Via Turbinado Raw Cane sugar and stevia blend sweetener
1 Tablespoon (15 mL) extra-virgin olive oil
6 cups (1.5 L) spring mesclum greens
1 medium Gala OR Braeburn apple, cored, very thinly sliced
½ cup (125 mL) dried cranberries
¼ cup (50 mL) toasted chopped almonds
¼ cup (50 mL) shaved Parmesan cheese

Directions
    Combine apple juice concentrate, vinegar and Pure Via Turbinado Raw Cane sugar and stevia blend sweetener in microwave safe container. Microwave on HIGH 25 to 30 seconds. Remove from microwave and stir until Pure Via Turbinado Raw Cane sugar and stevia blend sweetener is completely dissolved. Whisk in olive oil until blended. Set vinaigrette aside.

    Combine greens, apple, cranberries and almonds in large bowl. Gently toss with vinaigrette. Sprinkle with cheese.
