A full flavored quick bread made with ripe bananas. Oats provide extra fiber and a “hearty” texture. Pure Via reduces the calories, but not the flavor!
Makes 16 servings
6 tablespoons (90 mL) butter, softened
24 packets Pure Via sweetener
1 cup (250 mL) mashed very ripe bananas (about 2 medium)
1/4 cup (50 mL) 1% low fat milk
1 teaspoon (5 mL) vanilla extract
1 3/4 cups (425 mL) all-purpose flour
3/4 (175 mL) cup uncooked old fashioned oats
2 teaspoons (10 mL) baking powder
1/2 teaspoon (2 mL) EACH baking soda, ground cinnamon, salt
1/3 cup (75 mL) chopped nuts
Preheat oven to 350°F. Spray a 9 x 5-inch loaf pan with cooking spray; set aside.

Beat butter and Pure Via until well blended. Mix in bananas, eggs, milk and vanilla.
Gradually mix in combined dry ingredients until well blended. Stir in nuts.
Spoon batter into prepared pan. Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack.
