An easy to make mousse combines nonfat vanilla Greek yogurt with whipped topping, coconut extract and Pure Via. The mousse is topped with pineapple pieces and granola, then garnished with fresh mint.
Makes 6 servings
2 cups (500 mL) nonfat vanilla flavoured Greek yogurt
1 1/3 cups (325 mL) light whipped topping
18 packets Pure Via sweetener
1/2 teaspoon (2 mL) coconut extract
1 can (20 ounces [565g]) pineapple tidbits in unsweetened juice, drained
1/3 cup (75 mL) plain granola
6 packets Pure Via Turbinado and Stevia Blend sweetener
Fresh mint, optional
For Mousse, combine all ingredients. Refrigerate until ready to serve.
Nutritional information (per serving)
For Pineapple Topping, combine pineapple and Pure Via sweetener. Let stand 8 to 10 minutes. Stir.
To serve, place 1/2 cup mousse into each of 6 dessert dishes.
Top with some of the Pineapple Topping and granola. Garnish each serving with fresh mint.
