A traditional pumpkin pie recipe with fewer calories thanks to Pure Via and fat-free evaporated milk. Your family and guests will never know what is missing because it tastes even better than the typical calorie laden pie.
Makes 8 servings
Pastry for single crust 9-inch pie
1 can (15 ounces [425g]) pumpkin
1 can (12 ounces [340g]) evaporated fat free milk
3/4 cup (175 mL) Pure Via Granulated*
2-1/2 teaspoons (12 mL) pumpkin pie spice
1-1/2 teaspoons (7 mL) vanilla extract
1/4 teaspoon (1 mL) salt
Light whipped topping (optional)
*Substitute 18 packets Pure Via for the Granulated product.
Preheat oven to 400°F (200°C).

Roll pastry on floured surface into a 10-inch circle. Ease into pie plate; trim and flute edges.
Beat pumpkin, evaporated milk and eggs in medium bowl; beat in remaining ingredients. Pour into pastry shell.
Bake 35 to 40 minutes or until knife inserted near center comes out clean. Cool on wire rack. Serve with light whipped topping, if desired.
