Not only is this dessert easy to make, it is also a lower calorie version of the ultra-rich one upon which it is based. It needs to chill at least 2 hours before being served – so plan ahead!

Makes 2 servings

Ingredients
½ cup (125 mL) warm strong coffee
1 packet Pure Via Turbinado Raw Cane sugar and stevia blend sweetener
½ cup (125 mL) part-skim ricotta cheese
½ cup (125 mL) prepared lite whipped topping
8 packets Pure Via Turbinado Raw Cane sugar and stevia blend sweetener
½ teaspoon (2 mL) vanilla extract
8 crisp ladyfingers*
1 teaspoon (5 mL) unsweetened cocoa

*Crisp ladyfingers can be found in the ethnic area of most grocery stores.

Directions
    Combine coffee and 1 packet Pure Via Turbinado Raw Cane sugar and stevia blend sweetener. Stir until Pure Via Turbinado Raw Cane sugar and stevia blend sweetener is dissolved. Let coffee cool to lukewarm.

    Meanwhile, whisk together ricotta cheese, whipped topping, 8 packets Pure Via Turbinado Raw Cane sugar and stevia blend sweetener and vanilla. Refrigerate until ready to use.

    Place coffee in shallow bowl. Dip 4 of the ladyfingers into coffee and let stand about 5 seconds. Remove and place 2 ladyfingers side by side on a plate for each tiramisu. Spread each tiramisu with ¼th of the ricotta mixture. Sprinkle each with ¼ teaspoon (1 mL) of the cocoa. Repeat dipping and layering. Discard any remaining coffee.

    Refrigerate, covered with plastic wrap, at least 2 and up to 8 hours before serving.
